Sibson Shortbread

100g (4oz) butter or vegetable margarine
50g (2oz) caster sugar
100g (4oz) pea flour
25g (1oz) desiccated coconut

To serve: lettuce, tomato slices, parsley sprigs, toast

Cream the fat and sugar together until light and fluffy. Add the pea flour and coconut and mix with a knife to form a ball of dough. Shape dough, on a lightly sugared board, into an 18cm (7") round 1 cm (½") thick. Cut out small biscuits using a pastry cutter. Place biscuits on a lightly grease baking sheet and cook in the oven 180º C / 350º F Gas Mark 4 for 15 minutes. Cool, then transfer to wire tray. Store in a airtight container.
